Simple Italian Mussels Marinara - This quick fix, super speedy recipe for simple Italian mussels, gets its distinct Italian from the marvelous marinara sauce. Next to no prep, and cooked in 10 minutes or less, serve with crusty bread for an appetizer, or over hot fresh pasta, as a simple Italian dinner.

Ingredients to make Simple Italian Mussels Marinara
3lb lb(1.4 kg) (1.4 kg) musselmussels
1tbsp tbsp(15 mL) extra-virgin olive oil
1small onion, minced
1clove garlic minced
1/2cup cup(125 mL)white wine
1-1/2cups cups(375 mL) Marinara Sauce
1/4cup cup(50 mL)minced fresh parsley
Directions to make Simple Italian Mussels Marinara
Scrub mussels; remove any beards. Discard any that do not close when tapped. Set aside.
In Dutch oven, heat oil over medium-high heat; fry minced onion and garlic, stirring occasionally, until softened, about 5 minutes.
Stir in wine, sauce and half of the parsley; bring to boil. Add mussels; cover and cook until mussels open, about 8 minutes. Discard any that do not open. Sprinkle with remaining parsley.
